Mint & Lemon Balm Couscous

If you are looking for a summery salad recipe that compliments our salad boxes beautifully or simply a meal that is full of health and takes zero effort to put together then try this very easy cousous recipe:


Mint & Lemon Balm Couscous

Serves 4-6


175g couscous

1/2 pint hot veg stock

A handful of mint and lemon balm, stripped and copped finely


Mix the above in a bowl and cover for 15 minutes.


Meanwhile chop:

Cucumber, tomatoes, spring onions, radishes

(anything else you have that you wish to use up)


After 15 minutes, mix everything together and add a generous splash of

Black Pepper & Lemon Dressing to taste.


Then enjoy!
